Eggplant Parmesan Sandwiches

1 globe eggplant, regarding one pound

2 eggs

2 tablespoons flour

1½ cups dry breadcrumbs

1 teaspoon dried oregano, crushed

½ teaspoon salt

½ teaspoon black pepper

4 ounces cheese

4 bomber rolls

2-3 tablespoons vegetable oil

½ cup grated cheese cheese

2 cups pasta sauce sauce

1 tiny bunch recent basil

Directions:
1: Slice eggplant crosswise into ⅓” slices. Pat dry.

2: Whisk eggs and flour along during a shallow bowl.

3: mix crumbs, seasonings in another shallow bowl.

4: Dredge eggplant slices in egg combine, then breadcrumbs. Lay on a rack to “dry” at temperature 10-30 minutes.

5: in the meantime, slice rolls open and place on baking sheet. Lay 2 slices cheese on half every and place into 200ºF kitchen appliance to soften cheese and heat buns.

6: Heat a pair of tablespoons oil during a giant cooking pan over medium heat and fry eggplant slices during a single layer regarding 3-5 minutes on all sides till golden and tender.

7: As slices area unit sauteed, drain on a rack and sprinkle with cheese whereas still hot. Cook remaining eggplant, adding a bit a lot of oil if necessary.

8: Once all slices area unit sauteed, drain almost one teaspoon of oil from the cooking pan and punctiliously add sauce to cooking pan and warmth to effervescent.

9: take away rolls, high cheese with eggplant slices and sauce and recent basil leaves.
Serve like a shot.
