Barbecue Turkey Meatloaf Minis – This is an easy meatloaf recipe that stays juicy and cooks in about 15 minutes. Kids and guest will enjoy these little personal meatloaf balls.
I was running low on food around the house this weekend but I found a package of ground turkey in my freezer. I wasn’t in the mood for turkey tacos or turkey burgers so I decided to try to come up with something new. These little barbecue turkey meatloaf minis is what I ended up creating and I am very glad because this dish quickly became my favorite meal.
I remember a few months ago I came across a couple recipes that called for a cupcake tray. I always passed them up because I never owned a tray until this past valentine’s day when someone special gave me a heart shaped cupcake tray.
I have never made meatloaf before but I know it is very similar to a meatball. So I looked around the house pulled out some ingredients and this is what I came up with. I hope you enjoy this mini turkey meatloaf recipe.
Serves 3 to 4.

1lb ground turkey
1/2 c Italian seasoned bread crumbs
1/4 grated Parmesan cheese
1 large egg
1 tbsp salt
2 tbsp garlic powder
shredded mozzarella cheese
barbecue sauce
Get out a large mixing bowl and begin to add your ground turkey, bread crumbs, Parmesan cheese, egg, salt and garlic powder together. I recommend mixing everything with your hands in order to ensure that it is all mixed together.
Next, prepare your cupcake tray and spray each compartment with a little Pam. Take just enough meat to cover the bottom of each compartment and pack tightly. After the bottom of the cupcake molds are completely covered, place a layer of shredded mozzarella cheese on top. Finish each mold off with the remaining turkey meat, this will create a little cheese ball between the two layers of meat.

Place the turkey meatloaf minis into the oven and let them cook for 15 to 20 minutes. The time will vary because of your tray’s thickness and color. Just keep an eye one them, they will get a little brown on top and you may even see some cheese start to pour out.
Once they are fully cooked, let them rest for 5 minutes so the juices stay within the meat, take each meatloaf mini out and serve by drizzling your favorite barbecue sauce on top.
