Toasted Muesli with a Fig Twist

Please note that while this meal is low carb, the added figs are naturally sweet and may affect your weight-loss goals. You can still enjoy this delicious breakfast while substituting another fruit for figs.


 3 cups Flaxseed meal

½ cup Raw honey or your choice of sweetener

¼ cup Chia seeds

1 cup Your choice of nuts (almonds, cashews, walnuts, pecans, shelled pistachios, or a combination)

1 teaspoon Ginger powder

1 teaspoon Cinnamon powder

1 ½ teaspoons Pure vanilla extract

¼ Your choice of apple, sliced

2 to 3 Figs, sliced

½ to 1 cup Your choice of milk (almond, coconut, cashew) or Greek or plain yogurt


 Preheat the oven to 350˚ Fahrenheit. Line two baking sheets with wax paper or grease them with a bit of olive oil or butter.

In a large mixing bowl, add all of the ingredients together except for the apples, figs and milk.

Divide the mixture evenly on the baking sheets and place in the oven for about 20 minutes until toasty golden brown. Rotate the pans and stir the ingredients halfway during baking time to assure they cook evenly.

Remove from oven. This is your muesli that can be stored in an airtight container in the pantry or the fridge. Feel free to add dry fruit to the mixture as well.

When ready to serve, place a portion into a bowl, add desired amount of milk or yogurt and top with apple and fig slices.
