At this time of Thanksgiving, I would like to reflect upon the most wonderful blessing and gift that I have. That blessing is my life. I know that that encompasses so very much and would take volumes to write, but that is what I have been pondering. I have come to know for myself that if I had never experienced the bitter, I could never have discovered the sweet. I have definitely endured excruciating learning moments. After I have come out of those challenges, the simple moments in life tend to have greater meaning.
A child’s laugh and rambunctious energy brings me joy after witnessing many moments of intense sickness. The ability to love again is so refreshing after having had the love of my life die. Having a peace of mind is so enlivening when the peace has been absent for years. Oh how beautiful things appear after the heart has been wrenched, been brought to its lowest point, and then begins to recover. A miracle occurs and the good things in life manifest themselves with greater clarity. Yes, I am grateful for my life. I would never truly be able to know how sweet it really is if I had not tasted the bitter.
Here is a “sweet” recipe that was a hit for my children. They asked for seconds and thirds, which always makes cooking all natural worth the effort. These all natural Gluten-Free, Dairy-Free, Meatballs are simple to make and taste great. Enjoy!
All Natural Meatballs
- 1 pound ground beef
- 1 egg
- 1 long carrot
- 1/2 tsp sea salt
- 1/4 tsp dried basil
- 3/4 tsp dried thyme
- 1/4 tsp black pepper
In a mixing bowl, add the egg and water and mix well. Peel and grate a long carrot into the bowl.
