I remember the day when I cooked with cream soups. I would purchase the cheapest Cream of Chicken that I could find, bring it home, and have a complete meal in a matter of minutes. This course continued for quite awhile, until I discovered my son’s allergy to milk products. I just quit those soups cold turkey (which was a blessing considering how toxic they are). Once I decided to convert to cooking all natural, I was appalled at the ingredient list that was on each cream soup. Even more shocking is how often people cook with Cream of Chicken and Cream of Mushroom. It is so easy to make a homemade Cream of Chicken that goes great in recipes, especially since there are not any options for those with food allergies. Here is my version of a great tasting All Natural, Gluten-Free, Dairy-Free, Cream of Chicken.
Gluten-Free, Dairy-Free, Cream of Chicken
2 1/2 cups homemade chicken broth or all natural chicken broth
2 1/2 cups coconut milk
1/4 tsp rosemary
1/2 tsp garlic powder
1/4 tsp black pepper
1/2 tsp dried parsley
1/2 cup Gluten-Free Flour Blend
In a pan, add the chicken broth and only 1 1/2 cups of coconut milk. Then, add all of the spices.

Spices Added with Broth and Coconut Milk
Mix the broth, coconut milk, and spices. Bring to a boil stirring occasionally until it boils. Once mixture boils, mix the remaining cup of coconut milk with the flour in a bowl. Reduce the heat on the broth and add the milk and flour mixture. Stir until the broth thickens and resembles cream of chicken soup.
Mixed Ingredients for All Natural Gluten Free Dairy Free Cream of Chicken
After the broth thickens, it can be used in any recipe. Or it can be stored for future use. Let it cool and place in a container. Store in the refrigerator. Yields about 4 cups of Cream of Chicken.
