Gluten-Free, Dairy-Free, Honey Mustard Chicken

As I gazed into the blue hue of the sky, I noticed puffy white clouds lined with gray in the distance.  This did not discourage me since I had just engaged in a kickball game with my two sons. With the thrill of being able to kick the ball over their heads and round the bases, nothing could dissuade me on this beautiful spring day, even the dark clouds near the horizon.

Yes, it is that time of year when we finally leave the confines of the house and bask in the warmth.  After experiencing bitter cold temperatures this winter, it is a relief to feel 59 degrees.  During our kickball game, my sons exclaimed, “It is so hot out here!”  It is these simple moments that make it all worth it.  I love this time of year when everything comes to life again.

After we finished playing outside, my children and I were searching for a meal to satisfy our hunger.  This All Natural, Gluten-Free, Dairy-Free, Honey Mustard Chicken hit the spot.  I prepared it and then placed it in the oven.  It baked while I spent time with my family. We enjoyed this delicious meal and three of my children begged for seconds!

Honey Mustard Chicken

  • 1/4 cup all natural buttery spread (Earth Balance)
  • 1/2 cup honey
  • 1/4 cup prepared mustard
  • 1 tsp curry powder
  • 1/4 tsp garlic powder
  • 3 boneless skinless chicken breasts or 3 chicken breasts with bone and skin
  • 1/2 chopped onion (optional)

Preheat an oven to 350 degrees.  While the oven is preheating, place the buttery spread in a pan and melt in the oven.  Once the buttery spread is melted, remove the pan from the oven and add the onion, honey, mustard, curry powder, and garlic powder.  Mix well.
