Gluten-Free, Dairy-Free, German Pancakes

As long as I live, I will never become desensitized to my daughters’ seizures. Between the two of them, I have probably witnessed close to 100 seizures. Unfortunately, they are only 2 and 4 years old. A few weeks ago, my 4 year old became ill and seized many times. It brought me to the same shock and despair as it always does when she struggles. My heart ached for and wished that she could be free of her affliction.

The reality is that she will probably always struggle with epilepsy and will yearn to be free of it as well. But, there are just some challenges that never subside in this life. I admire her for her strength and courage. Even though the road is difficult and pushes me beyond my limits, I am blessed to be the mother of two wonderful daughters who struggle daily with their health. It is through their examples and perseverance that I have learned so much.

During the discovery of my daughters’ epilepsy, I began to cook gluten-free (I was already cooking dairy-free for my sons). I became perplexed at making the transition. I did not have any knowledge on cooking gluten-free, so I set out to learn more. Through trial and error, I concocted this All Natural Gluten-Free, Dairy-Free, German Pancake recipe. My daughters and I indulge in it and I love to smother it with a fruit spread (contains no added sugar). It is a consistent recipe used in our breakfast rotation.

Al Natural Gluten-Free, Dairy-Free German Pancakes

6 eggs
1 cup Gluten-Free Flour Blend
1 cup water
2 TBSP all natural buttery spread (Earth Balance soy free)
In a mixing bowl, crack the eggs and whisk them until well blended. Add the water and Gluten-Free Flour Blend. Whisk until all lumps are gone. Preheat an oven to 450 degrees. Place the all natural buttery spread into a 9 X 13 pan. Place in the oven and melt the butter. Remove the pan from the oven and spread the buttery spread around until the pan is completely coated. Pour the German Pancake batter into the pan. Place back into the oven and bake for 13-15 minutes (The baking time depends on the oven. I usually bake mine for 15 minutes). Remove from the oven and serve.
