With the passing of another Mother’s Day, I would like to pay tribute to my own mother. I could never comprehend the sacrifices that she made, until I became a mother. I was raised in very humble circumstances. My mother was the wife of a dairy farmer and times were extremely tough. She was not frivolous by any means. In fact, I do not remember her buying new clothes for herself, even when she needed them.
She led by example and taught me how to work. She spent countless hours harvesting vegetables from the garden, bottling peaches and pears, and making home cooked meals. After all of this, she would help my dad accomplish jobs on the farm (even milking the cows). I know that there were many times that she was frustrated, but she just kept trudging forward.
Besides hard work, she was always extremely supportive. She attended all of my extracurricular activities and quietly cheered me on from the sidelines. Still to this day, she supports me and congratulates me for my successes and cries with me during my failures. I love you mom! Gluten-Free, Dairy-Free, Chocolate Chip Coconut Cookies
1/2 cup all natural buttery spread (Earth Balance)
1/2 cup organic cane sugar
1 1/2 tsp all natural vanilla
1 tsp baking powder (aluminum free)
1 tsp guar gum
1 1/2 cup Gluten Free Flour Blend
1/3 to 1/2 cup of dark chocolate chips
1/2 cup unsweetened all natural shredded coconut
In a mixing bowl, add the buttery spread and cane sugar. Cream together. Add the vanilla and eggs. Mix well. Add the baking powder and guar gum. Mix well. Add the coconut and chocolate chips (the amount of chocolate chips varies according to personal preference). Mix well. Finally, add the Gluten-Free Flour Blend and mix well.
