Chocolate Coconut Peanut Butter Cups

After a long harsh winter, the snow begins to recede and spring appears. It is so invigorating to shed the winter gear and breathe in the fresh air that is not bitter anymore. This winter, we had to endure temperatures that plummeted to 35 degrees below zero, but with spring right around the corner, those horrific memories are long gone.

I have always loved spring. Spring promises hope and better things to come. Even if the temperatures are extremely cold and the wind howls, I know that it is only going to improve. Spring is like a new birth and a chance to rejuvenate. After 3-4 months of hibernation, it is time to bask in the sun’s rays and soak up the beauty of this world.

The changing of the seasons is a lot like life. There are moments that are joyous and they remind me of summer. Then, extreme challenges began to rare their ugly head. As they begin, it is as if fall is upon me and then winter. While those challenges continue, it can be cold and troubling. Then they began to recede (or I get a hold of them in my heart) and hope arrives, just like spring. During this period of time, I am rejuvenated and given the strength to continue on.

During all of the challenges that each of us face daily, there is still the hope to keep eating all natural foods. Here is a great dessert recipe that is divine! These All Natural, Gluten-Free, Dairy-Free, Chocolate Coconut Peanut Butter Cups are scrumptious and leave me feeling very satisfied.

Chocolate Coconut Peanut Butter Cups

1 cup dark chocolate chips
1/4 all natural buttery spread (Earth Balance)
1/4 cup all natural peanut butter
1 cup all natural shredded coconut (no sugar added)
1 cup raw almonds
In a pan, add the chocolate chips, buttery spread, and peanut butter.

Heat and stir until the mixture is smooth and well blended. Turn off the heat. Add the coconut and almonds and mix well.

Spoon into muffin tins. Fill each tin about 2/3 full. Place in the freezer and chill until firm (about 30 minutes). Remove from the freezer.

Take a butter knife and pop out each cup (if the chocolate is firm, they should pop out easily). Place extra Chocolate Cups in a freezer bag and store in the freezer for future desserts. Remove from the freezer and allow to soften a little before eating.
