All Natural Slow Cooker Shredded Chicken Teriyaki

With the excitement of bringing in the new year, so many of us resolve to make positive change. And with good intentions, we press forward thinking that this year will somehow be different than the last. How long do these resolves really last? Not nearly long enough. I can only make mention of this, since I am one of those who fizzles out with my transformation as time marches on. Recently, I discovered why change doesn’t last.

Change is truly a matter of the heart. Most resolutions begin in the mind and merely fade with time. The mind is not powerful enough to make a change. The transformation has to become a passion and a conversion in the heart, insomuch that there is dedication and effort to see it through. Once committed into the heart, the process to change, whatever it may entail, becomes worth the sacrifice.

That is how I converted to all natural cooking. The desire to learn all that I could about the dangers of preservatives sunk deep into my heart and a passion began to take hold. I thirsted to know all that I could and then act on that knowledge. It did take about a year to completely convert, but it has been worth all of the effort and I will never return to my old ways. Now that I realize that change occurs in the heart, it is a quest to make other improvements in my life.

Along with all of the resolutions, making quality all natural meals with hectic schedules can become a reality. This All Natural, Gluten-Free, Dairy-Free, Slow Cooker Shredded Chicken Teriyaki tastes fabulous and allows me to meet all of my other obligations while it cooks.

Slow Cooker Shredded Chicken Teriyaki

1 cup water
2 TBSP organic cane sugar
4 TBSP coconut aminos
2 TBSP freshly squeezed lemon juice
2 TBSP olive oil
1/4 tsp black pepper
1/4 tsp garlic powder
2 boneless skinless chicken breasts
In a slow cooker place all of the ingredients, except for the chicken. Mix the ingredients. Add the chicken and cook on high for 4-5 hours. When the cooking time is completed, twist a fork through the chicken to shred it. Once the chicken is shredded, most of the liquid will be absorbed. Remove chicken from the slow cooker and serve. Goes great on tortillas, potatoes, or salad.
