All Natural Fried Boneless Skinless Chicken Breasts

January often brings bitter cold weather. One morning we woke to six inches of beautiful snow that had high moisture content. At 10 a.m. it is extremely cold most mornings, but the weather was mild (close to freezing). So, my children and I bundled up and we raced outside. It was so refreshing to trudge through the powder and play in it. It was moist enough that we built a gigantic snow man (which is hard to due in the area that we live in). Then the wind began to blow and it brought our excitement to a halt as we dashed inside.

The snowfall was delightful, but I knew what the next phase was. THE BITTER COLD. Once this system moved out, temperatures plummeted to -35 degrees Fahrenheit. It has been hovering around these temperatures at night off on and on for the last couple of weeks.

Living in the country has so many wonderful advantages, except for the bitter winters. As I stay inside and long for the return of summer, I still have to cook 3 meals a day. Sometimes cooking is the only thing that I have to look forward to while I wait for it to warm up to at least 30 degrees.

That is where this tasty All Natural, Gluten-Free, Dairy-Free, Fried Boneless Skinless Chicken Breast recipe comes in. It helps me break up those long winter months with a mouthwatering flavor that warms me. Just as the country has its advantages, so does eating all natural. The flavor is so much more exhilarating and better for me. I also enjoy the satisfaction of teaching my children how to take care of their bodies, instead of resorting to something quick, easy, and artificial!

All Natural Gluten-Free, Dairy-Free, Fried Boneless Skinless Chicken Breasts

1/2 cup Gluten-Free Flour Blend
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp thyme
All Natural Buttery Spread (Earth Balance brand)
2 boneless skinless chicken breasts
In a bowl, combine the flour, sea salt, pepper, paprika, and thyme. Stir all of the spices into the flour blend. Slice the chicken breasts into 3 pieces lengthwise (I like thinner chicken).

Heat a pan and coat generously with the buttery spread. Dip each side of the chicken breasts into the flour blend and place in the pan.

Allow the first side to cook for a few minutes. Use a metal spatula to scoop under the first piece. While holding the piece of chicken on the spatula, spread more buttery spread where the chicken was. Flip the chicken over and place it on top of the butter. Continue to do this to each piece. After turning them once, turn them again, spreading butter before putting the chicken back in the pan. (I turned the chicken about four times and it took about 20 minutes to cook the chicken)

Once the chicken is cooked and the juices run clear, remove from the pan and serve.
